It’s so hard to pick favourites, but the challenge of listing down 10 recipes that represent the true cultural spirit of India has to be accomplished. Hopefully you will enjoy cooking them as much as I enjoyed putting them together, just for you!
1. Rogan Josh – Recipe by Sarla Razdan
Roganjosh is the signature dish of Kashmir. Mixed with varied spices, it is prepared with the aroma of fennel seeds, bay leaves, turmeric, garam masala and is indeed a celebration of all senses.
2. Butter Chicken – Recipe by R John
This delectable plate is a serious reason why every Punjabi takes pride in his food. Chunks of chicken marinated in yogurt and a mix of spices, served with dollops of melting cream and/ or butter on top.
3. Bhapaa Aloo – Recipe by Joy Banerjee
This one gets the Bengali flavours just right. The humble potato tossed over in local flavours of coconut paste mustard oil and panch phoron. Simple yet gratifying!
4. Banjari Gosht – Recipe by Chef Jitendra Kumar
An out of the ordinary experience with authentic Rajasthani flavours is this fine blend of yogurt and juicy mutton pieces.
5. Chicken Stew and Appam – Recipe by Joey Matthew
This spectacular dish comes right from hidden treasures of God’s own country. Lumps of chicken suffused in spiced and dreamy coconut gravy with soft-cantered appams.
